The Strand Bistro opens on busy William Street in Darlinghurst

The redevelopment of traffic-choked William Street has long been a political hot potato.

But instead of waiting for a masterplan for a strip once dubbed “the boulevard of broken dreams,” The Strand Hotel in Darlinghurst has gone ahead with its own update.

The new French-inspired bistro is a nice addition to the busy thoroughfare.

With a boutique hotel to open soon and a rooftop bar above, Chef Alex Kavanagh has a food offering that jumps from spoonfuls of Beluga caviar to duck breast served with prunes and radicchio, and steak frites.

Also on the opening menu is “Le Burger” with Gruyère.

The main menu is available until 10pm, but a smaller bar menu goes until just after 2am.

The Strand is the first in a series of new locations that Public Hospitality plans to open next year.

With a vision to restore historic buildings to their former state, Camelia Grove in Alexandria, Erskineville’s Kurrajong Hotel and City Hall in Balmain are all on the group’s to-do list.

Open Sun-Thu 06:00-midnight; Fri-Sat 6am-3am.
